By mid-August, most of us are over putting much effort into anything. We don’t want to cook, we’re not interested in intense workouts and quiet quitting is the only way to get through the working day. It’s now that you need a quick, refreshing breakfast recipe to get your teeth into.
This watermelon ‘pizza’ dish is incredibly simple yet nutritious. Over 90% of watermelon is, well, water – making it a great option for hydration. Packed with potassium, magnesium and vitamins A and C, watermelon is also a rich source of something called citrulline, an amino acid that’s been linked to improved exercise performance.
So, if you’re looking for something quick, refreshing and energising, this might just be the pizza recipe you never knew you needed.
Ingredients
1 small water melon, sliced
2 tbsp natural coconut yoghurt
Handful of chocolate granola
A drizzle of maple syrup or honey
Topping options
Handful of mixed nuts
Toasted coconut
Pomegranate seeds
Mint leaves
Method
Slice your watermelon into 1-inch thick rounds.
With a sharp knife or toothpick, remove the seeds – being careful not to break the slice.
Spread the coconut yoghurt, as you would a passata, before sprinkling the granola all over.
Drizzle the slice with your choice of sweetener.
Finally, throw on any added toppings you’ve chosen.
Slice and enjoy.
