Hummus really is the king of dips. Spread it on toast, dunk carrots in it, slop a spoon next to your falafels – it’s just so versatile and good for you! But it’s worth making baba ganoush because the aubergine-based dip is packed with vitamins, fibre and antioxidants that’ll boost and replenish your body. 

Aubergines are a great source of B vitamins which help your metabolism, and potassium, one of the most important minerals for staying healthy and energised. The dip is also full of fibre which is great for maintaining overall digestive health.

Ingredients

2 aubergines

The Groovy Food Company Avocado Oil Spray

Tahini (to taste)

Lemon juice

Pinch of salt

Method

Start by spraying the aubergines with the avocado oil.

Pop the aubergines in the oven on high heat until they are charred on the outside. If you are using a BBQ, rotate the aubergines every few minutes to avoid burning them. However you are cooking them, they should be evenly charred and soft. 

Take a spoon and scoop out the middles. Combine the aubergine with lemon juice, a pinch of salt and tahini to taste.
